Cardamom and Cinnamon Granola


Makes about 7 cups.

Ingredients:

  • 2 and 3/4 cup rolled oats

  • 1 cup wide cut unsweetened coconut flakes

  • 1 cup shelled pistachios (or combination of your favorite unsalted nuts)

  • 1/3 cup shelled pumpkin seeds

  • 1/3 cup olive oil

  • 1/3 cup maple syrup

  • 1 tsp each cardamom and cinnamon

  • 1 teaspoon salt

  • 2/3 cup dried cherries (or your favorite dried fruit)

Instructions:

  1. Set oven to 300°F. Line a large rimmed baking sheet with parchment paper.

  2. In a large mixing bowl, combine all dry ingredients (reserve spices and salt). Add olive oil and maple syrup and mix to thoroughly coat. Gently fold in cardamom, cinnamon, and salt ensuring equal distribution.

  3. Transfer to lined baking sheet and spread evenly. Bake for 35-40 minutes until mostly dry and golden, stirring granola every 10 minutes.

Remove from oven and mix in dried cherries. Allow to cool to room temperature before storing in an air-tight container
